Hey friends!!! Hope the diwali celebrations went on good for all of u… It was a hectic day for me… traveled a long for this diwali and enjoyed lots of things in and around Calif. and now back to form and to blogging…
After hogging the sooper damaka festival recipes and all, I tuned back to a healthy recipe… I sometimes turn super-nutritious person and starts to follow a strict diet chart which goes for a week or so. Then the next week I look back for a yum-sum foods… one such food which I follow in my diet chart is Brown Rice Pilaf… In most of the restaurants they serve Brown rice pilaf. When the brown rice is cooked to perfection, it would the stage taker.
If ur more conscious about health, go for this rice. Generally White rice which we consume for the day-day life lacks so much of vitamins and minerals. For my convenience I used mustard and onion in the dish. You can skip adding it… I served it with Paneer Matar Masala.
Preparation time: 30-45 minutes
Cooking time: 30 minutes
1 cup Brown rice
½ tsp mustard
1tsp chopped onions
1 green chillies (finely chopped)
1-2 Garlic finely chopped
Salt (as per taste)
3 cups of water
How to make it
- Wash the rice in running water for 1-2 times and drain it. Add the 3 cups of water to the rice and allow it to stand for 30-45 mins. This soaking time is important to make the rice softer and cooks easily. Brown rice needs much more water and time than the normal white rice. So be patient while cooking. Refer notes to see how to cook brown rice in a rice cooker.
- In a skillet heat oil and splutter mustard (this is purely optional, the original recipe doesn’t need this)
- Once the mustard splutters, add onions green chillies and garlic. Mix it well.
- Then add the rice along with water and add salt.
- Mix well and check for the spiciness. Keep the flame in medium-high till the water inside starts boiling.
- Then turn the flame to medium-low and allow it to cook on its own. It will take another half an hour depends on the quality of the rice.
- Gently mix the rice in between. Once the rice is completely cooked and has no water in it, turn the switch off and garnish with coriander leaves and serve hot.
- You can transfer the onion mix to a rice cooker and add the water and rice directly to the rice cooker.
- Mix the rice along with the onions and close the lid. When the rice is completely cooked u will hear the beep. Then you can turn off the cooker. This is much easier than doing in a wok.
